“Cognac is a versatile liquor. Though I love enjoying the dynamic flavors of it in a snifter after dinner, it’s a delicious ingredient in cocktails. For example, in What the Dickens, the pear and apple notes in the cognac blend well with the juices in the cocktail. Also, the warm vanilla and caramel flavors from the oak barrel aging of cognac balance out the bitters.”

What The Dickens

Recipe & Method:

-1 oz Mt Gay Eclipse
-.5 oz Ccognac
-.75 oz Simple
-.5 oz lime juice
-1.5 oz Pineapple juice
-3 dash Peychaud bitters
-1 dash Angostura bitters

Shake, strain over ice in Collins glass and garnish with a lime wheel

Anjou Pear Cocktail

Recipe & Method:

1 oz. VSOP Cognac
1 oz. French Pear-flavored Vodka
1 oz. Elderflower Liqueur
1Ž2 oz. Simple Syrup
1Ž2 oz. Lemon Juice

Using a jigger, measure out the ingredients into a Boston Shaker filled with ice. Shake hard and strain into a chilled Martini glass.

Recipe & Method:

1 1/2 oz Cognac
1/4 oz Fernet Branca
1/2 oz Lemon
1/2 oz Honey
1 bar spoon house made fig jam

Combine all ingredients in a shaker, shake until cold, serve in a old fashion glass over one large square ice cube, garnish with a fig slice.

Recipe & Method:

2 ounces of cognac
3 quarters of an ounce of lemon juice
½ ounce of house made orgeat
¼ ounce of walnut Liquor
Shaken strain in a coup garnish with candied walnut dust.
