“I like working with cognac because it lends itself to be very diverse in a mixability application. The craftsmanship in a well-made cognac is second to none. The skill of a master distilled to blend different eau du vies to obtain specific flavor profile is comparable to a symphony conductor organizing different instruments to obtain a harmonious sound. This delicate balance is why I appreciate and desire to use cognac in well-crafted cocktails.”
